Smoked Provolone cheese is a semi hard firm textured cheese that is mildly spicy, lightly smoked, slightly nutty, creamy, waxy, tangy tasting cheese that is made from pasturised cow’s milk. Provolone, like mozzarella, is a pulled or stretched curd cheese and melts very well. Provolone is so often matched with spicy sopressatas, olives, roasted red peppers, and that pickled spicy giardiniera mix of cauliflower, carrots, celery, and green peppers. All of these condiments can match the intensity of provolone. It pairs nicely with a Pinot Grigio or Soave wine.
