Grilled Watermelon Pizza with Red Onion + Feta + Crispy Prosciutto + Mint
Grilled Watermelon Pizza has to be one of my all time summer favourites. Quick and easy to prepare and so fresh tasting. The flavours marry wonderfully and your family and friends are sure to be impressed with this unique dish. A perfect appetizer while enjoying a glass of wine on the patio.
INGREDIENTS
- 1 cup sliced red onion
- 3 tablespoons red wine vinegar
- 1 tablespoon sugar
- 1/4 teaspoon kosher salt
- 2 teaspoons extra-virgin olive oil
- 1 (3/4-inch-thick) slice seedless watermelon (from a 9-inch-diameter watermelon)
- 1 Ounce Feta, crumbled (about 1/4 cup)
- 5 Slices Prosciutto, Grilled or pan fried till crispy
- Mint Sprigs
Directions:
- Heat a grill or grill pan to medium-high heat.
- Crisp 5 slices in fry pan or on grill, reserve
- Combine onion, vinegar, sugar, and salt in a medium bowl; let stand 15 minutes or until onion is softened, tossing occasionally.
- Brush olive oil onto both sides of watermelon slice. Grill watermelon 3 to 4 minutes on each side, until well marked and juicy; place on a serving platter or cutting board.
- Top watermelon evenly with pickled onions, Feta cheese and crispy prosciutto. Sprinkle with fresh mint.
- Cut into 8 wedges
